Chocolate crinkle cookies


In mijn laatste post schreef ik over koekjes bakken. Toen bedacht ik opeens dat ik al drie tutorials voor mijn blog had gemaakt, die ik nog helemaal niet had gepost. Ik zal beginnen met de beste. Deze koekjes maakte ik pas gisteren. Dit recept voor chocolate crinke cookies is van "Rudolph's Bakery", maar dan een beetje aangepast. Echt een heerlijke serie trouwens. Anyway, ze zagen er goed uit op televisie, maar smaakten nog beter. Deze koekjes zijn makkelijk om te maken, en heerlijk om te eten! Moet ik nog meer zeggen?

In my last post I wrote about baking cookies. Then I realised I had made about three tutorials for my blog, which I never posted. I'll start with the best one. I made these only yesterday. I saw this recipe in "Rudolph's Bakery", but this one is a little different. I love that series by the way. Anyway, they looked good on television, but were even better. These cookies are easy to make, and delicious to eat! Do I need to say more?

Ginger snaps

Hai! Vandaag had ik eindelijk weer tijd om te bakken :D Misschien is het je wel opgevallen dat de laatste echte recept post al twee maanden geleden is. Maar goed, I'm back baking again! En dit recept is super. Als je van gember houdt, vind je deze koekjes zeker lekker.

Hai! Today I finally had time to bake again :D You might have noticed that the last real recipe post was already two months ago. But anyway, I'm back baking again! And this recipe is amazing. If you like ginger, you'll love these cookies. 


 Het recept: / The recipe: 
Je hebt nodig: 6 gemberbolletjes en een halve eetlepel gembersiroop, 50 gram boter, 125 gram zelfrijzend bakmeel, 2 eetlepels stroop en een snufje zout.

You need: 6 gingerballs and half a tablespoon ginger syrup, 50 gr butter, 125 gram selfraising bakingpowder, 2 tablespoons treacle and a bit of salt.


 1. Mix het zelfrijzend bakmeel, het zout en de boter.

1. Mix the selfraising bakingpowder, the salt and the butter.


 2. Snijd de gemberballetjes, dit ruikt zo lekker!

 2. Cut the gingerballs in pieces, this smells so delicious!


 3. Mix de stroop, het gembersiroop en de stukjes gember door het beslag.

3. Mix the treacle, the ginger syrup and the pieces of ginger through the batter.




4. Verwarm de oven alvast voor op 175°C en maak ongeveer 16 koekjes. Bak ze dan 15 minuten.

4. Preheat the oven at 175°C and make approximately 16 cookies. Bake them for 15 minutes.

Oat-coco cookies with cranberries

Zin in iets lekkers én gezonds? Dit is het perfecte koekje! Vol met havermout en cranberry's (okee... en 'een beetje' suiker). En helemaal niet moeilijk om te maken. Wat wil je nog meer? Proberen natuurlijk! 

Fancy something tasty ánd healthy? This is the perfect cookie! Full of oat flakes and cranberries (okay... and 'a bit' of sugar). And not difficult at all to make. Do I need to say more? Try it of course!

Thumb cookies

Mijn vriendin Shanti doet mee aan een project genaamd World Servants, een christelijke organisatie die scholen, klinieken, schoonwatervoorzieningen en huizen bouwt met hulp van groepen jongeren en volwassenen uit Nederland. Een groep uit Haarlem wil helpen een kliniek en woningen voor verpleegkundigen in Changilo (Zambia) te bouwen. Shanti heeft een flink bedrag nodig om ter plekke te gaan helpen. Ze verkoopt hiervoor onder andere zelfgemaakte jam. Ik kocht van haar een potje appelpompoenjam, zo lekker! Ik heb hier heerlijke koekjes mee gemaakt. Het recept zie je hieronder.

My friend Shanti participates a project called World Servants, a Christian organisation that builds schools, clinics, water supplies and houses with teenagers and adults from the Netherlands. A group from Haarlem wants to help to build a clinic and houses for nurses in Changilo (Zambia). Shanti needs a considerable amount of money to help on site. She sells for example home made jam. I bought a jar of apple pumpkin marmelade, delicious! I made tasteful cookies with it. You see the recipe below.

Mocca walnut cookies

In my opinion, the two best ingredients are nuts and coffee. So this recipe is just like it's made for me. Coffee and walnuts: could it possibly be better? I don't think so!

You need:
  • 120 gr butter
  • 80 gr brown sugar
  • 100 gr chrystal sugar
  • 1 teaspoon almond essence
  • 1 teaspoon coffeepowder, dissolved in hot water
  • 1 egg
  • 150 gr flour
  • 1 teaspoon baking powder
  • 50 gr milk chocolate
  • 50 gr walnuts

  • and later I added approximately 35 gr self-raising flour
  • you could decorate every cookie with a walnut for the extra touch!


1. Mix the butter with the brown sugar and the crystal sugar. 

2. Sieve the flour trough it, together with the baking powder.

3. Stir the egg in one glass.
4. Make the coffee in another glass.
5. Mix the two things together and mix it trough the dough.

6. Eeeh this is chocolate xd.
It does look a bit nasty, but is certainly isn't.
Just spoon in trough the dough.

7. Chop the walnuts into tiny pieces and spoon in trough the cookiedough.

8. If you put everything together, it should look like this: smooth but not to sticky.

So, this shouldn't be too hard. But my dough was way to sticky. I couldn't even make small balls of it. So there was a little problem to solve. Wasn't too difficult. I just add one extra step:

9. Add approximately 35 gr self-raising flour to the batter. Just add it until the cookiedough isn't that sticky anymore. But of course it shouldn't be solid as concrete xd. Just use your brains.

The cookies are so yummy. Perfect with a cup of coffee.
I know see there's a little crack in it hehe, oops.

The cookies are so delicious. They're really different from what I had expected. A bit soft from the inside. But I like that. Although I like it better when the cookies are a bit more crunchy. Anyway, just lovely!

Cookie Girls

Heee, it has been a long time since my last post. I was just relaxing on the beach, having fun with my friends and partying. Anyway, since the weather is aweful right now I cannot even spend my time outside... This morning I got my school report so I'm finally done. Yay! (: 

Every year we do a activities day on school and this year the theme was 'festival'. So I baked cookies the evening before and surprised everybody with them. 

The pic was just token a bit too late, the cookies were already gone xd.

Last time I baked these cookies, everybody loved the freshness of the marmelade combined with the sweetness of the cookiedough. So I thought these were perfect for a festival.

Confetti cookies by Rudolph

Watching Rudolph's Bakery made me very enthusiatic to try these cookies. You can find the original recipe by Rudolph van Veen here. I changed it bit, to give it my touch. 


You need:

  • 50 gr butter
  • 50 gr sugar
  • 40 gr hazelnuts
  • 1 tablespoon milk
  • 25 gr pumpkin seeds
  • 50 gr raisins
  • 25 gr dried apricots
  • 2 tablespoons flour
You do:


1. Melt the sugar with the butter, this always smells so good! (:



 2. Add the flour and the milk, mix it together


 4. Cut the apricots and chop the hazelnuts.
Add the raisins, apricots, hazelnuts and pumpkin seeds to the batter.


4. Make little heaps on the covered baking plate

5. Bake the cookies for approximately 15 minutes at 180°C.
6. Get them out of the over and let the cookies cool down.


7. Crunchy yet soft: yummy!

Aaawh really, those cookies are really delicious. So different from what I've made before. By the way you can change any of the ingredients (then I mean the nuts, fruit or seeds) for something you like more. For example: use prunes instead of apricots. 

Now I'm off learning again. Today I did my first exam, it turned out very well so I should keep going like this...

Father's Day: Chocolate Mint Cookies

This was a little experiment for Father's Day. And it turned out more then I had hoped for. It looks awesome and it's delicious! Try it yourself, it's easy. 

You need:


Cookies
  • 300 gr flour
  • 150 gr sugar
  • 250 gr butter
  • 1 egg yolk
  • 1,5 tablespoon cacoa
Filling
  • 50 gr butter, melted
  • 75 gr powdered sugar
  • splash of mint syrup
You do:


1. Stir the butter


 2. Sieve the flour

 3. Add the sugar

 4. Then add the egg yolk

5. Add the cocoa. Doesn't it look cool? (:
Oh, please notice what the cookiedough looks like 'cause it should look like this.


6. Bake the cookies for 15 minutes at 175 °C

Then for the filling. I don't have pictures because it's one of those things you should do quickly. And I had to keep my head with it. So, no pictures. But it's easy, so don't worry.

7. Melt the butter
8. Mix the butter with the powdered sugar.
9. Add the mint syrup
10. Put it in the fridge to stiff it a bit up
11. Drop it on a cookie and put another cookie on top.

Easy, wasn't it?

Ginger cookies with coconut & tutti frutti

Another great day. Altough the it isn't as hot as it was, it's just lovely to be outside. Picture me laying in the grass drinking mint lemonade and listening music. In bikini of course (: You get the idea (: Relaxing relaxing relaxing. I hope you enjoyed your days as much as I did!

But my weekends, yeah I had three days weekend, are never complete without baking something sweet. Today I was in the mood for cookies. There was still ginger in the fridge, I love that ingredient. It had its own special taste, something that makes you instantly aware of what's in the cookies. Or brownies. Or cupcakes. I just love it. Anyway, I'll give you a little how-to. It's easy!

You need:
  • 250 gr soft butter
  • 165 sugar
  • 1 egg yolk, slightly stirred
  • 50 gr ginger, cut frail
  • 2 tablespoons ginger syrup, this is in the same glass jar
  • 250 gr flour
  • small touch of salt
  • 50 gr tutti frutti (I used prunes and apricots)
  • 90 gr grated coconut



1. Stir the butter and sugar airy and add the egg yolk.
Now is also the time to add the ginger syrup.

2. Sieve the flour and the salt trough the butter/sugar.

3. Cut the ginger and tutti frutti. Add the fruit to the batter and mix it all.

4. Mix also the grated coconut trough the batter.

5. Preheat the over on 190 °C and cover the baking plates with baking paper.
Then make small ball of the batter and press them together, as you see bove.
I used two plates. Oh and of course you should bake them, approximately 15 minutes.

The result, yummy for tea time!

Coco cookies with blueberry marmelade

Salut!


For everybody who would love to bake something delicious, but is a bit scared it will fail: try this! It only took me like twenty minutes to bake these cookies and everybody loves them. It was my little surprise for my mom as a Mother's Day present. She said they were "unbelievably delicious". Awesome! So don't hesitate, and look trough this short how-to (:


You need:

  • 250 gr butter
  • 165 gr sugar
  • 1 egg yolk
  • 2 tl almond extract
  • 250 flour
  • a tiny bit of salt
  • 100 gr graped coconut
  • 4 tablespoons of blueberry marmelade


1. First preheat the over on 190 °C and cover one or two baking plates with baking paper.


2. Stir the butter and sugar in a big bowl until it's light and airy.




3. Mix the egg yolk trough the butter/sugar, also add the almond extract.



4. Sift the flour trough it toghether with a tiny bit of salt.


5. Add the grated coconut. It might look like it's a bit too much, but believe me, it's perfect!



6. Make small balls and push your thumb in them to make a tiny hole for the marmelade.
Then bake the cookies for 10-15 minutes. The shorter, the stickier they will be. But don't make them too sticky or they won't even harden up in the end. Let them cool down for 5-10 minutes on the plate.





Serve them on a beautiful dish and surprise everybody!
